
Ingredients:
1 cup lentils
I large onion2 cloves garlic, minced
2 zucchini, sliced
1 red pepper sliced
1 green pepper sliced
1 eggplant, peeled and cubed
1 tbsp chili powder
1 tsp cumin
1 tsp oregano
1/2 tsp salt
1/4 tsp pepper
1 can tomatoes
2 cups veggie broth or water
Directions:
Combine Onion and garlic in a pan with water
and sautee for 2 mins.
Stir in Zucchini, peppers, and eggplant and cook
over medium heat for 5 mins stirring occasionally
Stir in Seasonings and cook another 5 mins
4.Add tomatoes, broth and lentils
Bring to a boil. Reduce heat to med- low and cook covered
for 40 mins. Enjoy!!!
